- Thinly slice cucumbers and red onion; place in a large bowl.
- In another bowl, whisk Greek yogurt, garlic, lemon juice, olive oil (if using), vinegar (if using), salt, pepper, and chopped dill until smooth.
- Pour dressing over vegetables and gently toss to coat evenly.
- Cover and refrigerate 15-30 minutes (or longer) to chill and meld flavors.
- Stir before serving, garnish with extra dill and pepper. Serve cold.
Notes
For extra crunch, salt cucumbers lightly, let sit 10-15 min, then pat dry before dressing.
