Method
- Preheat oven to 250°F (120°C).
- Pat roast dry and bring to room temperature.
- Mix butter, garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub mixture all over the roast.
- Place roast bone-side down in a roasting pan and roast until internal temperature reaches 120–130°F.
- Remove and rest 20–30 minutes.
- Increase oven temperature to 500°F (260°C).
- Return roast to crisp crust.
- Simmer au jus ingredients in roasting pan to reduce.
- Slice and serve with au jus.
Notes
Use a thermometer for best results. Let roast rest before slicing.
