Ingredients
  

Pancake Batter
  • 1.5 cups all-purpose flour
  • 3.5 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1.25 cups milk whole or 2%
  • 1 large egg
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract optional

  • Griddle or skillet

Method
 

  1. Sift together flour, baking powder, salt, and sugar in a large bowl.
  2. Whisk milk, egg, melted butter, and vanilla in a separate bowl.
  3. Pour wet ingredients into dry and stir until just combined.
  4. Heat griddle over medium heat and lightly grease.
  5. Scoop 1/4 cup batter per pancake and cook until bubbles form, about 2-3 minutes.
  6. Flip and cook until golden, 1-2 minutes more.
  7. Repeat with remaining batter and serve warm.

Notes

For extra fluff, let batter rest 5-10 minutes. Do not overmix.
