- Sift together flour, baking powder, salt, and sugar in a large bowl.
- Whisk milk, egg, melted butter, and vanilla in a separate bowl.
- Pour wet ingredients into dry and stir until just combined.
- Heat griddle over medium heat and lightly grease.
- Scoop 1/4 cup batter per pancake and cook until bubbles form, about 2-3 minutes.
- Flip and cook until golden, 1-2 minutes more.
- Repeat with remaining batter and serve warm.
Notes
For extra fluff, let batter rest 5-10 minutes. Do not overmix.
