- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened.
- Stir in garlic and cook briefly until fragrant.
- Add chicken, broth, bay leaf, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer.
- Remove chicken, shred, and return to pot.
- Stir in orzo and cook until tender.
- Add lemon juice and zest.
- Adjust seasoning and serve hot.
Notes
Add extra broth when reheating as orzo absorbs liquid.
