Ingredients
  

  • 3 lb beef tenderloin trimmed
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 0.5 cup unsalted butter
  • 4 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp lemon juice

Equipment

Method
 

  1. Bring beef to room temperature.
  2. Season with olive oil, salt, and pepper.
  3. Roast at 425°F until desired doneness.
  4. Rest meat before slicing.
  5. Prepare garlic butter sauce and serve.

Notes

Remove beef a few degrees early and rest for best results.
