Ingredients
  

Salad
  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 carrot grated
  • 3 green onions sliced
  • 2 tbsp fresh parsley chopped
Dressing
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 garlic clove minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp sesame seeds optional

Method
 

  1. Thinly shred the green and purple cabbage and place in a large bowl.
  2. Add grated carrot and sliced green onions to the bowl.
  3. Whisk together olive oil, apple cider vinegar, honey, garlic, salt, and pepper in a small bowl.
  4. Pour dressing over the vegetables and toss well.
  5. Add parsley and sesame seeds and toss again.
  6. Let the salad sit for 5–10 minutes before serving for best flavor.

Notes

You can add nuts, apples, or chickpeas to turn this salad into a more filling meal.
