Ingredients
  

Meringue
  • 4 egg whites room temperature
  • 1 cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar or lemon juice
  • 1 tsp vanilla extract
Topping
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • fresh berries for decorating
  • rosemary sprigs optional

Equipment

Method
 

  1. Preheat oven to 225°F (110°C) and line baking sheets with parchment paper.
  2. Beat egg whites until soft peaks form, then gradually add sugar until stiff peaks form.
  3. Fold in cornstarch, vinegar, and vanilla gently.
  4. Pipe meringue into small, medium, and large rounds.
  5. Bake for 90 minutes, then cool completely in oven.
  6. Whip cream with powdered sugar until soft peaks form.
  7. Assemble pavlova trees using whipped cream between layers and decorate.

Notes

Assemble just before serving for best texture.
