- Preheat oven to 350°F (175°C) and line baking sheets.
- Whisk flour, baking powder, and salt together.
- Cream butter and sugar, then add egg and vanilla.
- Mix in dry ingredients, then fold in pistachios and cranberries.
- Shape dough into wreaths and place on baking sheets.
- Bake 10–12 minutes until just set. Cool completely.
