Ingredients
  

Strawberry Filling
  • 1 cup strawberries fresh or frozen
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp gelatin bloomed
Vanilla Mousse
  • 1.25 cups heavy cream divided
  • 0.75 cup white chocolate chopped
  • 2 tbsp sugar
  • 1 tbsp gelatin bloomed
  • 2 tsp vanilla extract
Base
  • 6 cake rounds vanilla or sponge
Red Glaze
  • 0.5 cup white chocolate
  • 0.5 cup sweetened condensed milk
  • 0.5 cup sugar
  • 0.25 cup water
  • 1 tbsp gelatin bloomed
  • red food coloring as needed

Equipment

  • Silicone dome molds
  • Saucepan
  • Whisk
  • Heatproof bowls

Method
 

  1. Cook strawberries with sugar and lemon juice, blend, and stir in gelatin.
  2. Freeze strawberry mixture in small molds.
  3. Warm cream with sugar and vanilla, add gelatin, then combine with melted white chocolate.
  4. Fold in whipped cream to create mousse.
  5. Fill dome molds with mousse, insert strawberry center, and top with cake round.
  6. Freeze domes for at least 6 hours.
  7. Prepare red glaze and cool to pouring temperature.
  8. Unmold frozen domes and pour glaze over them.

Notes

Decorate with piped white trim for a Santa hat look.
