Ingredients
  

Pasta Salad
  • 12 oz rigatoni pasta
  • 1 cup feta cheese crumbled
  • 0.75 cup dried cranberries
  • 0.25 cup red onion finely diced
  • 0.25 cup fresh parsley chopped
Vinaigrette
  • 0.33 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook pasta until al dente, drain, and cool slightly.
  2. Whisk vinaigrette ingredients until smooth.
  3. Combine pasta, cranberries, feta, onion, and parsley.
