Ingredients
  

  • 12 oz rigatoni pasta
  • 3 cups baby spinach
  • 1 cup feta cheese crumbled
  • 0.75 cup dried cranberries
  • 0.5 cup walnuts toasted, chopped
  • 0.33 cup olive oil
  • 3 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook rigatoni until al dente and cool.
  2. Whisk together vinaigrette ingredients.
  3. Combine pasta with spinach, feta, cranberries, and nuts.
  4. Toss with lemon vinaigrette and rest before serving.

Notes

Add spinach just before serving if making ahead.
