Ingredients
  

Coleslaw Base
  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage optional
  • 1 apple julienned
  • 1 cup shredded carrots
Dressing
  • 0.33 cup mayonnaise
  • 1 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Optional
  • lemon juice to keep apples bright
  • parsley chopped

Method
 

  1. Shred the cabbage and carrots and julienne the apple.
  2. Whisk together mayonnaise, mustard, vinegar, honey, salt, and pepper.
  3. Combine cabbage, apples, and carrots in a large mixing bowl.
  4. Pour the dressing over the slaw and toss until evenly coated.
  5. Serve immediately or chill for 20–30 minutes to blend flavors.

Notes

For extra crunch, add toasted walnuts or sunflower seeds.
