Ingredients
  

Salad
  • 3 medium raw beets peeled and grated
  • 2 tbsp parsley chopped
  • 1 tbsp green onion optional
Lemon Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 garlic clove grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp sugar or honey optional

Equipment

  • Box grater
  • Mixing bowl
  • Whisk

Method
 

  1. Peel and grate the raw beets using a large grater.
  2. Whisk together olive oil, lemon juice, lemon zest, garlic, salt, pepper, and optional sugar.
  3. Pour dressing over beets and add parsley and green onion.
  4. Toss to combine. Serve immediately or chill before serving.

Notes

For added sweetness, grate 1 apple and mix it into the salad.
