Ingredients
  

Carrot Base
  • 2 lbs whole carrots peeled and trimmed
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tbsp honey
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme leaves
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Cook carrots for 6–8 minutes until just fork-tender, then drain well.
  3. In a large skillet, melt butter with olive oil over medium heat.
  4. Add garlic and cook for 30–45 seconds until fragrant.
  5. Stir in honey, lemon juice, salt, and black pepper.
  6. Add carrots and toss to coat evenly.
  7. Cook for 3–4 minutes until glossy and lightly caramelized.
  8. Stir in parsley and thyme, garnish, and serve warm.

Notes

For deeper flavor, let the butter lightly brown before adding garlic. Fresh herbs added at the end keep the flavor bright and elegant.
