Ingredients
  

Soup Base
  • 2 lbs boneless skinless chicken thighs
  • 6 garlic cloves thinly sliced
  • 3 inch fresh ginger peeled and finely chopped
  • 1 bunch scallions thinly sliced, whites and greens separated
  • 4 tsp kosher salt
  • black pepper freshly ground
  • 10 cups water or low-sodium broth
  • 8 oz dried ramen-style noodles
  • 2-3 tbsp soy sauce optional

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Knife
  • Tongs

Method
 

  1. Combine chicken, garlic, ginger, scallion whites, salt, pepper, and water in a large pot. Bring to boil, then simmer 20-25 minutes.
  2. Remove and shred chicken, return to pot.
  3. Add noodles and cook until tender per package.
  4. Adjust seasoning, add optional soy sauce or sesame oil.
  5. Serve garnished with scallion greens, cilantro, lime, and chili.

Notes

Adjust ginger/garlic to taste; cook noodles separately for leftovers.
