Ingredients
  

Batter
  • 2 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 2 large eggs
  • 0.75 cup milk
  • 1 tsp vanilla extract
  • 2 cups peeled and diced apples
Glaze
  • 1.5 cups powdered sugar
  • 3-4 tbsp milk
  • 0.5 tsp vanilla extract

Method
 

  1. Whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg in a bowl.
  2. In another bowl, beat eggs, then add milk and vanilla.
  3. Combine wet and dry ingredients until just mixed.
  4. Fold in diced apples.
  5. Heat oil to 350°F in a deep pot.
  6. Drop tablespoon-sized batter into oil and fry 2-3 minutes per side until golden.
  7. Drain on paper towels.
  8. Whisk glaze ingredients and drizzle over warm bites.

Notes

Use tart apples for best flavor balance.
