- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
- Heat olive oil and butter in a large skillet over medium-low heat. Add sliced onions, salt, and sugar. Cook 15–20 minutes until golden caramelized.
- Add minced garlic, chili flakes, and smoked paprika to onions. Cook 1–2 minutes until fragrant.
- Pour in vegetable or chicken broth, scraping up browned bits. Reduce 2–3 minutes until glossy.
- Add drained pasta to skillet, tossing to coat. Use reserved pasta water for a silky finish.
- Add parmesan cheese and lemon juice if desired. Toss gently.
- Garnish with chopped parsley. Serve hot immediately.
Notes
For extra depth, try adding a splash of balsamic vinegar while caramelizing onions.
