  • 400 g spaghetti
  • 3 red onions thinly sliced
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp red chili flakes adjust to taste
  • 1 tsp smoked paprika
  • 1 tsp sugar optional, for caramelization
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup vegetable or chicken broth
  • 0.25 cup grated parmesan cheese
  • 1 tbsp lemon juice optional
  • 2 tbsp fresh parsley chopped

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil and butter in a large skillet over medium-low heat. Add sliced onions, salt, and sugar. Cook 15–20 minutes until golden caramelized.
  3. Add minced garlic, chili flakes, and smoked paprika to onions. Cook 1–2 minutes until fragrant.
  4. Pour in vegetable or chicken broth, scraping up browned bits. Reduce 2–3 minutes until glossy.
  5. Add drained pasta to skillet, tossing to coat. Use reserved pasta water for a silky finish.
  6. Add parmesan cheese and lemon juice if desired. Toss gently.
  7. Garnish with chopped parsley. Serve hot immediately.

Notes

For extra depth, try adding a splash of balsamic vinegar while caramelizing onions.
