Ingredients
  

  • 3 cups gluten-free all-purpose flour blend with xanthan gum
  • 1 tsp salt
  • 2 tsp sugar or honey
  • 2.25 tsp instant yeast
  • 1.5 cups warm water
  • 2 tbsp olive oil

Equipment

  • Mixing bowl
  • Dutch oven or baking pot
  • Parchment paper

Method
 

  1. Preheat oven to 220°C (425°F). Place a Dutch oven inside to heat.
  2. Whisk together flour, salt, sugar, and yeast in a large bowl.
  3. Add warm water and olive oil. Stir until a thick sticky dough forms.
  4. Cover and let rise for 45–60 minutes until puffed.
  5. Transfer dough onto parchment paper and place into hot pot.
  6. Bake covered for 30 minutes.
  7. Remove lid and bake another 15–20 minutes until golden.
  8. Cool completely before slicing.

Notes

Dough should be wetter than traditional bread dough. Cooling is essential for proper texture.
