Ingredients
  

Crust
  • 1 pie crust pre-baked
Filling
  • 2 cups milk
  • 1 cup heavy cream
  • 0.75 cup sugar
  • 0.25 cup cornstarch
  • 4 egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1.5 cups shredded coconut
Topping
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract

Method
 

  1. Prepare and cool pie crust.
  2. Heat milk, cream, and sugar.
  3. Whisk egg yolks and cornstarch.
  4. Temper eggs and return to heat.
  5. Cook until thickened.
  6. Add butter, vanilla, and coconut.
  7. Pour into crust and chill.
  8. Top with whipped cream and serve.

Notes

Chill completely before slicing for best results.
