Ingredients
  

Dressing
  • 0.25 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp black pepper
Skewers
  • 1 large English cucumber cut into ½-inch rounds
  • 24 cherry tomatoes
  • 24 Kalamata olives pitted
  • 8 oz feta cheese cut into cubes

Method
 

  1. Whisk together olive oil, lemon juice, minced garlic, oregano, and pepper in a small bowl to make the dressing.
  2. Slice the cucumber into ½-inch thick rounds (about 48 pieces). Cut feta into 24 cubes.
  3. Assemble each skewer: Start with a cucumber round, add a cherry tomato, Kalamata olive, feta cube, and top with another cucumber round.
  4. Arrange skewers on a platter and drizzle with the prepared dressing just before serving.
  5. Garnish with fresh herbs if desired and serve chilled or at room temperature.

Notes

Assemble up to 24 hours ahead and store covered in fridge. Drizzle dressing shortly before serving to keep crisp.
