Ingredients
  

Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1 medium English cucumber grated and drained
  • 2-3 cloves garlic minced
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra-virgin olive oil
  • salt and black pepper to taste
Salad
  • 4 cups cooked chicken shredded
  • 0.5 cup red onion finely diced
  • 0.5 cup celery diced
  • 0.5 cup cherry tomatoes halved, optional
  • 0.33 cup Kalamata olives sliced, optional
  • 0.33 cup feta cheese crumbled, optional

Equipment

Method
 

  1. Grate the cucumber, squeeze out excess water using a towel.
  2. Mix Greek yogurt, drained cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper to make tzatziki. Refrigerate 30 minutes.
  3. In a large bowl, combine shredded chicken, red onion, celery, tomatoes, olives, and feta.
  4. Add tzatziki sauce to the chicken mixture and fold gently to coat everything evenly.
  5. Refrigerate for at least 1 hour to let flavors meld.
  6. Serve chilled with pita, lettuce wraps, or as desired.

Notes

Best made ahead for maximum flavor. Use rotisserie chicken for convenience. Store in fridge up to 4 days.
