Ingredients
  

Soup
  • 1 lb chicken breasts boneless, skinless
  • 2 cups green enchilada sauce
  • 4 cups chicken broth
  • 15 oz white beans drained
  • 1 cup corn

Equipment

  • Large pot or Dutch oven

Method
 

  1. Simmer chicken in enchilada sauce and broth.
  2. Shred chicken and return to pot.
  3. Stir in remaining ingredients until creamy.

Notes

Add toppings just before serving for best texture.
