Ingredients
  

Salad
  • 20 oz cheese tortellini cooked and cooled
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 0.5 cup banana peppers sliced
  • 0.75 cup salami chopped
  • 0.75 cup ham chopped
  • 1 cup provolone cheese cubed
Dressing
  • 0.75 cup mayonnaise
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp black pepper

Equipment

  • Large pot
  • Colander
  • Mixing bowls

Method
 

  1. Cook tortellini according to package instructions. Drain and cool completely.
  2. Add tortellini, lettuce, tomatoes, onion, peppers, meats, and cheese to a large bowl.
  3. Whisk dressing ingredients together in a separate bowl.
  4. Pour dressing over salad and toss gently to combine.
  5. Chill at least 30 minutes before serving.

Notes

Add lettuce just before serving if making ahead to keep it crisp.
