Ingredients
  

Soup
  • 2 heads garlic peeled
  • 3 tbsp olive oil
  • 0.5 cup onion chopped
  • 4 cups broth vegetable or chicken
  • 1 bay leaf
  • 1 cup crusty bread day-old
  • 1 egg yolk optional

Equipment

  • Medium pot
  • Wooden spoon

Method
 

  1. Gently cook garlic in olive oil until soft and fragrant.
  2. Add onion and cook until translucent.
  3. Add broth and bay leaf, then simmer.
  4. Add bread and cook until softened.
  5. Temper egg yolk and stir in off heat if using.

Notes

Keep heat low to avoid browning garlic.
