Main Ingredients
  • 1.5 lb baby potatoes
  • 7 oz block feta cheese
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp black pepper
  • 0.25 tsp chili flakes optional
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, garlic, oregano, black pepper, and chili flakes.
  3. Spread potatoes on the baking sheet and place feta in the center.
  4. Bake for 35–40 minutes until potatoes are golden and tender.
  5. Lightly smash potatoes and crumble feta over the top.
  6. Return to oven for 5–10 minutes, then finish with lemon juice and parsley.

Notes

Best served fresh and hot. Adjust seasoning after baking since feta adds saltiness.
