Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss potatoes with olive oil, garlic, oregano, black pepper, and chili flakes.
- Spread potatoes on the baking sheet and place feta in the center.
- Bake for 35–40 minutes until potatoes are golden and tender.
- Lightly smash potatoes and crumble feta over the top.
- Return to oven for 5–10 minutes, then finish with lemon juice and parsley.
Notes
Best served fresh and hot. Adjust seasoning after baking since feta adds saltiness.
