  • 3 large ripe bananas mashed
  • 1.5 cups fresh strawberries diced
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 0.33 cup honey or maple syrup
  • 1 tsp vanilla extract
Dry Ingredients
  • 1.75 cups all-purpose flour or whole wheat blend
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp ground cinnamon optional
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan.
  2. Mash bananas in a large bowl until smooth.
  3. Whisk in Greek yogurt, eggs, honey, and vanilla until combined.
  4. In another bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.
  5. Fold dry ingredients into wet just until combined.
  6. Gently fold in diced strawberries.
  7. Pour batter into pan and smooth top.
  8. Bake 50-65 minutes until toothpick comes out clean.
  9. Cool in pan 10 minutes, then on rack completely.

Notes

Pat strawberries dry to avoid excess moisture. Bread tastes even better the next day.
