Ingredients
  

Base
  • 1 cup quinoa rinsed
  • 1 cup lentils cooked
  • 2 cups spinach chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tbsp olive oil

Equipment

Method
 

  1. Sauté onion and garlic in olive oil.
  2. Add quinoa, lentils, tomatoes, broth, and spices.
  3. Simmer briefly, then stir in spinach.
  4. Transfer to baking dish and bake at 375°F for 35–40 minutes.
