Ingredients
  

Soup Base
  • 1.5 lb boneless skinless chicken thighs
  • 1 tbsp sesame oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 medium carrots sliced
  • 1 cup mushrooms sliced
  • 6 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 4 baby bok choy chopped

Equipment

  • Large soup pot or Dutch oven
  • Cutting board
  • Chef's knife
  • Wooden spoon

Method
 

  1. Heat sesame oil and cook onion until softened.
  2. Add garlic and ginger, cooking until fragrant.
  3. Add carrots and mushrooms, cooking for several minutes.
  4. Add chicken, broth, soy sauce, vinegar, and seasonings.
  5. Simmer 20–25 minutes until chicken is cooked through.
  6. Remove chicken, shred, and return to the pot.
  7. Add bok choy and simmer until just tender.
  8. Garnish and serve hot.

Notes

For extra texture, add noodles or steamed rice before serving. Add bok choy at the end to keep it vibrant and fresh.
