- Heat sesame oil and cook onion until softened.
- Add garlic and ginger, cooking until fragrant.
- Add carrots and mushrooms, cooking for several minutes.
- Add chicken, broth, soy sauce, vinegar, and seasonings.
- Simmer 20–25 minutes until chicken is cooked through.
- Remove chicken, shred, and return to the pot.
- Add bok choy and simmer until just tender.
- Garnish and serve hot.
Notes
For extra texture, add noodles or steamed rice before serving. Add bok choy at the end to keep it vibrant and fresh.
