Ingredients
  

Chicken
  • 1 whole chicken 1.5–2 kg
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste
Lemon Butter
  • 4 tbsp unsalted butter softened
  • 1 lemon zest
  • 0.5 lemon juice
  • 3 cloves garlic minced
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • 1 tbsp parsley
Aromatics
  • 1 lemon halved
  • 1 onion quartered
  • 3 cloves garlic whole

Equipment

  • Roasting pan
  • Mixing bowl

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Pat chicken dry and season with oil, salt, and pepper.
  3. Mix butter with lemon, garlic, and herbs.
  4. Spread butter under and over chicken skin.
  5. Stuff cavity with lemon, onion, and garlic.
  6. Roast 60–75 minutes, basting occasionally.
  7. Rest before carving and serving.

Notes

Use thermometer for perfect doneness. Add honey glaze for variation.
