- Preheat oven to 200°C (400°F).
- Pat chicken dry and season with oil, salt, and pepper.
- Mix butter with lemon, garlic, and herbs.
- Spread butter under and over chicken skin.
- Stuff cavity with lemon, onion, and garlic.
- Roast 60–75 minutes, basting occasionally.
- Rest before carving and serving.
Notes
Use thermometer for perfect doneness. Add honey glaze for variation.
