Ingredients
  

Cajun Chicken
  • 2 large boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp butter
  • 4 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 0.75 cup plain Greek yogurt
  • 0.5 cup parmesan cheese grated
Garlic Rice
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 3 cloves garlic minced

Method
 

  1. Season chicken breasts with Cajun seasoning and spices.
  2. Sear chicken in olive oil until golden and cooked through.
  3. Remove chicken and make garlic butter base in same skillet.
  4. Add broth, Greek yogurt, parmesan, and lemon juice to create creamy sauce.
  5. Return chicken to skillet and simmer gently.
  6. Cook garlic rice by sautéing garlic, toasting rice, and simmering in broth.
  7. Fluff rice, slice chicken, and serve with creamy sauce on top.

Notes

Use low heat when adding Greek yogurt to keep the sauce smooth and creamy without curdling.
