  • 1 lb large shrimp peeled, deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
  • 1 small red onion diced
  • 1 jalapeño minced, optional
  • 2 cloves garlic minced
Quesadilla
  • 8 tortillas high-fiber or whole wheat
  • 2 cups shredded Monterey Jack cheese
Tomato Avocado Salsa
  • 2 tomatoes diced
  • 1 large avocado diced
  • 0.25 cup red onion chopped
  • 0.25 cup fresh cilantro chopped
  • juice of 2 limes
  • 0.5 tsp salt

Method
 

  1. Season and cook shrimp in olive oil with spices until pink. Sauté onion, jalapeño, and garlic, then combine with shrimp.
  2. Mix all salsa ingredients in a bowl and set aside.
  3. Assemble quesadillas with cheese and shrimp filling, fold in half.
  4. Cook in skillet 2-3 minutes per side until golden and cheese melts.
  5. Cut into wedges, top with salsa, and serve hot.
