Ingredients
  

Gingerbread Crust
  • 1.5 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.25 tsp ground nutmeg
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup molasses
  • 1 egg yolk large
  • 1 tsp vanilla extract
Chocolate Ganache Filling
  • 12 oz dark chocolate finely chopped, 60-70% cocoa
  • 1.25 cups heavy cream
  • 2 tbsp unsalted butter softened
  • 1 tsp vanilla extract
  • 1 pinch sea salt

Equipment

Method
 

  1. Preheat oven to 350°F. Grease 9-inch tart pan.
  2. Whisk dry ingredients: flour, cocoa, baking soda, salt, spices.
  3. Cream butter and sugar. Add molasses, yolk, vanilla.
  4. Mix in dry ingredients to form dough. Press into tart pan.
  5. Bake 18-22 minutes until set. Cool completely.
  6. Heat cream to simmer. Pour over chopped chocolate. Let stand, then stir smooth with butter, vanilla, salt.
  7. Pour ganache into cooled crust. Refrigerate at least 4 hours.
  8. Garnish and serve chilled or at room temperature.

Notes

Make ahead for best flavor. Use high-quality chocolate for glossy ganache. Garnish festively for holidays.
