Ingredients
  

Wafer Dough
  • 1 cup rice flour (gluten-free)
  • 0.5 cup almond flour (gluten-free)
  • 0.25 cup tapioca starch
  • 0.5 tsp baking powder (gluten-free)
  • 0.25 tsp salt
  • 0.25 cup unsalted butter softened
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp milk (dairy or plant-based)
Chocolate Coating
  • 12 ounces semi-sweet chocolate chips divided
  • 1 tbsp coconut oil optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk rice flour, almond flour, tapioca starch, baking powder, and salt in a bowl.
  3. Cream butter and sugar until fluffy. Add egg and vanilla.
  4. Mix in dry ingredients alternating with milk to form dough.
  5. Divide and roll dough thin between parchment.
  6. Bake 8-10 minutes until golden. Cool on wire rack.
  7. Melt 6 oz chocolate with half coconut oil.
  8. Layer wafers with chocolate, chill 15 minutes.
  9. Cut into bars.
  10. Melt remaining chocolate, dip bars, chill until set.

Notes

Store in fridge for crispiness.
