Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk rice flour, almond flour, tapioca starch, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy. Add egg and vanilla.
- Mix in dry ingredients alternating with milk to form dough.
- Divide and roll dough thin between parchment.
- Bake 8-10 minutes until golden. Cool on wire rack.
- Melt 6 oz chocolate with half coconut oil.
- Layer wafers with chocolate, chill 15 minutes.
- Cut into bars.
- Melt remaining chocolate, dip bars, chill until set.
