Homemade Eggnog Pudding

Ingredients
  

  • 2.5 cups whole milk
  • 4 egg yolks
  • 0.5 cup granulated sugar
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 0.75 tsp ground nutmeg
  • 1 pinch salt

Method
 

  1. Whisk sugar, cornstarch, nutmeg, and salt in a saucepan.
  2. Slowly whisk in milk and cook until thickened.
  3. Temper egg yolks and return to saucepan.
  4. Cook 2–3 minutes until smooth and thick.
  5. Remove from heat and stir in butter and vanilla.
  6. Chill at least 2 hours before serving.

Notes

Cover surface with plastic wrap to prevent skin.
