Method
- Whisk sugar, cornstarch, nutmeg, and salt in a saucepan.
- Slowly whisk in milk and cook until thickened.
- Temper egg yolks and return to saucepan.
- Cook 2–3 minutes until smooth and thick.
- Remove from heat and stir in butter and vanilla.
- Chill at least 2 hours before serving.
Notes
Cover surface with plastic wrap to prevent skin.
