Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup creamy peanut butter
Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 0.5 cup creamy peanut butter
  • 2-3 tbsp milk or cream

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and brown sugar until fluffy. Add egg, vanilla, and peanut butter.
  4. Mix in dry ingredients until dough forms.
  5. Shape dough, flatten, and mark with fork.
  6. Bake 12–15 minutes until lightly golden. Cool completely.
  7. Beat filling ingredients until smooth.
  8. Sandwich cookies with filling and serve.

Notes

Chill dough if soft. Cookies freeze well.
