Ingredients
  

  • 3 tbsp unsalted butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 3 cups chicken broth
  • 4 cups broccoli florets
  • 1 cup milk
  • 0.5 cup heavy cream
  • 2 cups sharp cheddar cheese freshly shredded
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Method
 

  1. Sauté onion and garlic in butter.
  2. Stir in flour, then whisk in broth.
  3. Add broccoli and pressure cook 5 minutes.
  4. Blend, then stir in milk, cream, and cheese.

Use freshly shredded cheese for smooth texture.
