Method
- Pat the chicken dry and rub with olive oil.
- Mix spices and rub generously over the chicken.
- Stuff cavity with lemon and garlic.
- Add broth to Instant Pot and place trivet inside.
- Set chicken on trivet breast-side up.
- Cook on High Pressure for 28 minutes.
- Natural release for 15 minutes, then release remaining pressure.
- Broil for 4–5 minutes if desired for crispy skin.
Notes
Use the leftover broth for soups, rice, or gravy. Broiling after pressure cooking gives the best rotisserie-style finish.
