Irish Potato Farls

Ingredients
  

Potato Dough
  • 2 cups mashed potatoes cooled
  • 0.5 cup all-purpose flour plus extra for dusting
  • 2 tbsp butter melted
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp butter or oil for frying

  • Skillet or frying pan
  • Spatula
  • Rolling pin
  • Knife

Method
 

  1. Place mashed potatoes in a mixing bowl and mix with melted butter, salt, and pepper.
  2. Gradually add flour and mix until a soft dough forms.
  3. Turn dough onto a lightly floured surface and gently knead.
  4. Roll or pat dough into a circle about 1/2 inch thick.
  5. Cut the circle into four triangular pieces.
  6. Heat butter or oil in a skillet over medium heat.
  7. Cook farls for 3–4 minutes on each side until golden brown.
  8. Serve warm with butter or traditional breakfast sides.

Notes

Best made with leftover mashed potatoes. Serve with eggs, bacon, or butter for a traditional Irish breakfast.
