Ingredients
  

  • 2 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 3 cups potatoes cubed
  • 2 cups carrots sliced
  • 1.5 cups parsnips sliced
  • 2 cups mushrooms sliced
  • 6 cups vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 2 bay leaves
  • 1 cup green peas

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Sauté onion in olive oil until soft.
  2. Add garlic and mushrooms, cook until browned.
  3. Stir in tomato paste and vegetables.
  4. Add broth and herbs, simmer until tender.
  5. Add peas, season, and serve.

Notes

Stew thickens naturally as it cools.
