Ingredients
  

  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 3 egg yolks large
  • 2 tbsp heavy cream
  • 2 tsp vanilla bean paste or extract
  • 0.25 cup granulated sugar for topping

Method
 

  1. Preheat oven to 350°F and line baking sheets.
  2. Whisk dry ingredients together.
  3. Cream butter and sugar, then add egg yolks.
  4. Mix in cream and vanilla, then dry ingredients.
  5. Bake cookies until set but soft in center.
  6. Cool completely, then caramelize sugar topping.

Notes

Torch sugar just before serving for best crackle.
