Ingredients
  

  • 1 sheet puff pastry thawed
  • 4 oz goat cheese softened
  • 2 tbsp honey plus extra for drizzle
  • 1 tsp fresh thyme leaves
  • 1 egg egg beaten for egg wash
  • freshly cracked black pepper optional

Equipment

  • Parchment paper
  • Knife
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C) and line baking sheet with parchment paper.
  2. Roll puff pastry slightly and cut into 12 equal squares.
  3. Place 1 tsp goat cheese in the center of each square.
  4. Sprinkle with fresh thyme leaves and optional black pepper.
  5. Fold squares into triangles or leave open-faced; press edges lightly to seal if folding.
  6. Brush tops with beaten egg.
  7. Bake 12–15 minutes until puff pastry is golden and flaky.
  8. Drizzle lightly with honey and serve warm.

Notes

Avoid overfilling and keep puff pastry cold for best results.
