- Preheat oven to 400°F (200°C) and line baking sheet with parchment paper.
- Roll puff pastry slightly and cut into 12 equal squares.
- Place 1 tsp goat cheese in the center of each square.
- Sprinkle with fresh thyme leaves and optional black pepper.
- Fold squares into triangles or leave open-faced; press edges lightly to seal if folding.
- Brush tops with beaten egg.
- Bake 12–15 minutes until puff pastry is golden and flaky.
- Drizzle lightly with honey and serve warm.
Notes
Avoid overfilling and keep puff pastry cold for best results.
