- Cook apples with butter, brown sugar, cinnamon, and nutmeg until soft, then cool.
- Cream butter and sugars, then add egg and vanilla.
- Whisk flour, baking soda, salt, and cinnamon, then add to wet ingredients.
- Flatten dough balls, add apple filling, and seal.
- Bake at 350°F (175°C) for 10–12 minutes.
- Drizzle cookies with warm caramel and sprinkle with flaky salt.
