Ingredients
  

Soup Base
  • 1.5 lbs beef chuck cubed
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 4 cloves garlic minced
  • 1 tbsp tomato paste
  • 28 oz diced tomatoes
  • 8 cups beef broth
  • 1.5 tsp Italian seasoning
  • 0.75 cup small pasta

Equipment

  • Large soup pot
  • Wooden spoon
  • Chef's knife

Method
 

  1. Brown beef in olive oil and set aside.
  2. Sauté vegetables and garlic, then add tomato paste.
  3. Return beef, add tomatoes and broth, and simmer.
  4. Add vegetables and pasta, cook until tender.

Notes

Store leftovers in the fridge up to 4 days or freeze for later.
