  • 0.25 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp parsley chopped
Soup
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 6 cups chicken broth
  • 0.75 cup small pasta
  • 3 cups spinach

Method
 

  1. Combine meatball ingredients and roll into small meatballs.
  2. Sauté onion, carrots, celery, and garlic in olive oil.
  3. Add broth and simmer meatballs.
