- Wash chicken with lime juice and water, pat dry. Marinate with browning, sugar, spices, herbs, and half the veggies for 1+ hours.
- Heat oil and brown chicken pieces in batches. Set aside.
- Sauté remaining veggies in pot until softened.
- Add reserved marinade, ketchup, and broth. Return chicken.
- Simmer covered 35-45 minutes until tender.
- Uncover to thicken sauce if needed. Adjust seasoning and serve.
Notes
Marinate overnight for best flavor. Adjust spice to preference.
