Ingredients
  

Steak Marinade
  • 1 lb flank steak
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Fajita Vegetables
  • 1 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 large onion sliced
For Serving
  • 8 small tortillas
  • fresh cilantro
  • lime wedges
  • sour cream or guacamole optional

Equipment

  • Cast iron skillet or grill pan
  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Mix marinade ingredients and coat steak.
  2. Marinate for 20–30 minutes.
  3. Cook steak in hot skillet 4–5 minutes per side.
  4. Let steak rest before slicing.
  5. Sauté peppers and onions in skillet.
  6. Add sliced steak back to the pan.
  7. Serve in warm tortillas with toppings.
