Ingredients
  

Kafta Mixture
  • 1.5 pounds ground beef 80/20 fat ratio
  • 1 large onion grated or minced
  • 1 cup fresh parsley finely chopped
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground allspice
  • 1 tsp paprika smoked optional
  • 0.5 tsp ground cinnamon
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 0.25 tsp cayenne pepper optional
  • 0.5 tsp baking soda
  • olive oil for brushing

Equipment

  • Mixing bowl
  • Grill or grill pan
  • Skewers
  • Tongs

Method
 

  1. Combine ground beef, onion, parsley, garlic, spices, salt, and baking soda in a bowl. Mix well and refrigerate for 30 minutes.
  2. Shape mixture around skewers into 5-6 inch logs.
  3. Preheat grill to medium-high and brush kebabs with oil.
  4. Grill 4-5 minutes per side until cooked through.
  5. Rest for 2-3 minutes and serve.

Notes

For best results, use fresh herbs and don't overcook.
