- Combine ground beef, onion, parsley, garlic, spices, salt, and baking soda in a bowl. Mix well and refrigerate for 30 minutes.
- Shape mixture around skewers into 5-6 inch logs.
- Preheat grill to medium-high and brush kebabs with oil.
- Grill 4-5 minutes per side until cooked through.
- Rest for 2-3 minutes and serve.
