Kielbasa Cowboy Beans

A hearty, smoky, and flavor-loaded bean casserole made with kielbasa sausage, bacon, ground beef, and rich barbecue-style beans.

Ingredients
  

Bean Mixture
  • 1 lb kielbasa sausage sliced into rounds
  • 1 lb ground beef
  • 6 slices bacon chopped
  • 1 small onion diced
  • 2 cans baked beans 15 oz each
  • 1 can kidney beans drained and rinsed
  • 1 can pinto beans drained and rinsed
  • 0.75 cup barbecue sauce
  • 0.5 cup ketchup
  • 0.25 cup yellow mustard
  • 0.33 cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper optional

  • Large oven-safe skillet or Dutch oven
  • Wooden spoon

  • Knife and cutting board

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook chopped bacon in a large oven-safe skillet until crispy. Remove and set aside.
  3. Add onion and sliced kielbasa to the skillet and cook until lightly browned.
  4. Add ground beef and cook until browned. Drain excess grease if needed.
  5. Stir in baked beans, kidney beans, and pinto beans.
  6. Add barbecue sauce, ketchup, mustard, brown sugar, Worcestershire sauce, and seasonings.
  7. Mix well and stir the crispy bacon back into the skillet.
  8. Bake uncovered for 35–40 minutes until hot, bubbly, and thickened slightly.

Notes

This recipe tastes even better the next day and works great for potlucks, cookouts, and meal prep.
