Ingredients
  

Lavender Syrup
  • 1 cup water
  • 0.5 cup honey or sugar
  • 2 tbsp dried culinary lavender
Mocktail
  • 1 cup fresh lemon juice
  • 3 cups sparkling water chilled
  • 1 tbsp lemon zest
  • ice cubes for serving
  • lemon slices for garnish
  • fresh mint leaves for garnish
  • extra dried culinary lavender optional garnish

Equipment

  • Small saucepan
  • Fine mesh strainer
  • Large pitcher
  • Serving glasses

Method
 

  1. Combine water, honey or sugar, and dried culinary lavender in a small saucepan.
  2. Bring to a gentle simmer, stirring until dissolved.
  3. Remove from heat and let steep for 10 minutes.
  4. Strain the syrup and let it cool completely.
  5. In a large pitcher, combine fresh lemon juice, lemon zest, and cooled lavender syrup.
  6. Stir well and chill in the refrigerator.
  7. Fill glasses with ice cubes and pour the lemonade mixture halfway.
  8. Top with sparkling water and gently stir.
  9. Garnish with lemon slices, mint, and optional lavender before serving.

Notes

Use culinary lavender only and avoid over-steeping to keep the floral flavor light and balanced.
