- Combine water, honey or sugar, and dried culinary lavender in a small saucepan.
- Bring to a gentle simmer, stirring until dissolved.
- Remove from heat and let steep for 10 minutes.
- Strain the syrup and let it cool completely.
- In a large pitcher, combine fresh lemon juice, lemon zest, and cooled lavender syrup.
- Stir well and chill in the refrigerator.
- Fill glasses with ice cubes and pour the lemonade mixture halfway.
- Top with sparkling water and gently stir.
- Garnish with lemon slices, mint, and optional lavender before serving.
