Ingredients
  

Soup Base
  • 2 cups shredded turkey cooked
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups turkey broth
  • 1 cup egg noodles
  • 1 tsp thyme
  • 1 tsp parsley
  • salt and pepper to taste

Method
 

  1. Sauté vegetables until soft.
  2. Add garlic and cook briefly.
  3. Pour in broth and bring to boil.
  4. Add turkey, herbs, and seasoning.
  5. Add noodles and simmer until tender.
  6. Serve warm with garnish.
